Have you ever had pork chops that you could cut with a fork like butter? Well, that’s what these are like. Soft, buttery, and full of herbs and spices. Slow cooker pork chops are definitely my go-to way to make this kind of recipe. Not only is it a 1-dish cleanup, but it’s also really easy to make. I have a feeling that you’re going to love it as much as I do!
One thing I love about this recipe is how versatile it is. You can add your favorite vegetables to the crock pot, like parsnips, sweet potatoes, or whatever you like. I’m even thinking about adding some green beans about an hour before the time is up, for a complete dinner. You can also play with the spices here, and get creative!
Andrew and I recently adopted a puppy, Arthur (photos to come!). So the house has been a little bit hectic. It mostly consists of chasing the puppy up the stairs, and then down the stairs, and then up the stairs again. Pause to stop him from eating something he’s not supposed to, then down the stairs again. To be honest, I was really grateful that I had these slow cooker pork chops going while I was puppy-chasing. It just made things a little bit easier to not have to worry about dinner.
I haven’t tried it yet, but I’m also considering adding apples to this recipe. If applesauce goes well with pork chops, it stands to reason that cut up apples would too, right? I’ll let you know how it goes.

Slow Cooker Pork Chops & Potatoes
Ingredients
- 5 medium Yukon gold potatoes, cut into quarters
- 4 thick cut boneless pork chops
- 1 medium yellow onion, chopped
- 1 cup vegetable broth
- 1 cup mushrooms, sliced
- 1/4 cup extra virgin olive oil
- 2 tbsp corn starch
- 1 tbsp garlic powder
- 1/2 tbsp paprika
- 1 tsp dried oregano
- 1/2 tsp thyme
- 1/2 tsp salt
- 1/2 tsp pepper
Equipment
- Slow Cooker
Instructions
- Add potatoes, onion, mushrooms, and broth to slow cooker. Place pork chops on top of vegetables.
- In a small bowl mix together oil, corn starch, garlic powder, paprika, oregano, thyme, salt, and pepper. Pour over pork chops.
- Place lid on slow cooker and cook on HIGH for 4 hours, or LOW for 8 hours.Â
