Parmesan Roasted Brussel Sprouts
Parmesan Roasted Brussel Sprouts are the perfect side dish, made with garlic and parmesan cheese, and ready in under 30 minutes!

Parmesan Roasted Brussel Sprouts
Parmesan Roasted Brussel Sprouts are insanely easy to make, and one of my favorite healthy side dishes! I make them with olive oil, spices, and shredded parmesan cheese. All you have to do is toss everything together, roast in the oven, and that’s it! I like to cut them in half, but you can make these whole if you want to. You can also mix up the spices to your liking, or try them with a dash of my homemade taco seasoning!
How do you cut roasted brussel sprouts?
Cut roasted brussel sprouts while you’re prepping the dish. Use a sharp knife to cut any browning pieces off of the bottom of the sprout or to trim them into shorter pieces. Then cut the sprout itself in half. Discard any loose or browning leaves.
Do brussel sprouts need to be washed?
It is always good practice to wash your vegetables before preparing them. Even if they’re not dirty per se, you have no idea how they were handled or who touched them before they arrived at your table. To wash your sprouts, you can rest them in a bowl of cold water. Or you can place them in a colander and toss them a few times under the running water. Allow the sprouts to dry before preparing them, or the oil may not stick.
Can I cut brussel sprouts the night before?
You can cut brussel sprouts the night before. I recommend keeping them tightly sealed in an airtight container in the refrigerator afterwards, until you’re ready to use them. I would also wait to rinse them until you’re ready to use them, to keep them fresher for longer. Once you cut your brussel sprouts, you will have 1-2 days to use them before they start browning.

Brussel sprouts go with almost anything, but I particularly like to pair them with these dishes.

How do you get the bitterness out of brussel sprouts?
Personally, I like the flavor of roasted brussel sprouts just as they are. But if you are finding your sprouts are a little bitter, you can blanch them in salted water before preparing them further. Cutting them in half also helps some of the bitterness cook out.
Can I cook brussel sprouts ahead of time?
You can cook brussel sprouts ahead of time and either refrigerate them for up to 3 days, or freeze them for several months. Either way, store them in a tightly sealed airtight container. If you freeze your sprouts, defrost them in the refrigerator the night before. The next day, roast them again at 350F for 20-25 minutes, or until they are warmed through.
Tips for How to Make Parmesan Roasted Brussel Sprouts
- Serve your parmesan roasted brussel sprouts with extra shredded parmesan cheese on the table, or some gluten free ranch dressing for dipping!
- If you want your sprouts to look a little charred (my personal preference!), turn the broiler on for 1-2 minutes. Make sure you watch them really closely, because they can burn quickly under the broiler!
- Space your roasted brussel sprouts out as evenly as possible, to make sure they roast and don’t steam.
- Use 1/4 tsp of cayenne pepper or red pepper flakes to add a little heat to your parmesan roasted brussel sprouts.
- If you want your brussel sprouts extra crispy, add a breading topping. Mix 3 tbsp of melted butter with 1/2 cup gluten free breadcrumbs. Mix until breadcrumbs look wet, then sprinkle on top of brussel sprouts.
- Try to cut your sprouts as evenly as possible. The closer they all are to the same size, the more evenly they will cook, and you won’t end up with mushy smaller pieces.
- Add some chopped bacon to your mix to get some extra flavor!

Parmesan Roasted Brussel Sprouts
Ingredients
- 2 lbs brussel sprouts, trimmed and cut in half
- ¼ cup extra virgin olive oil
- 1/2 cup parmesan cheese, shredded or grated
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
Equipment
- Sheet pan
- Mixing bowl
Instructions
- Preheat oven to 400F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, toss together all ingredients. Spread the brussel sprouts out on the baking sheet. Bake for 30-40 minutes, or until sprouts are soft and parmesan is starting to get crispy.
- If you want charred sprouts, turn on the broiler for 1-2 minutes, watching closely so they don't burn!
