Instant Pot White Chicken Chili
Instant Pot White Chicken Chili is hands down one of my favorite instant pot recipes of all time. And that’s saying a lot! I love to make this right around the time when the weather starts cooling down, and especially during football season! It’s so incredibly simple to make, with just some chicken breast, a can of corn, a can of diced green chiles, a few cans of beans, and some broth. You probably have most of these ingredients in your pantry already!
How to Make White Chicken Chili in the Crock Pot
You can make white chicken chili in the crock pot if you have a really busy day and need a warm dinner at the end of it!
- Add all ingredients, except for cheese, to the crock pot. Stir together.
- Set the crock pot on high for 4 hours, or on low for 8 hours.
- When the time is up, remove the chicken from the crock pot and shred with two forks. Add back to the crock pot, along with mozzarella. Stir and serve with avocados, sour cream, and tortilla chips!
How to Make Instant Pot White Chicken Chili Healthier
White chicken chiliย soundsย pretty healthy, but honestly it can get better. If you want to lower the calories for this recipe, omit the cheese altogether. Also, cut the amount of white beans down, and add extra vegetables instead. You can add zucchini, turnips, or broccoli to your chili!
Tips for How to Make Instant Pot White Chicken Chili
- If you want your white chicken chili extra creamy, add 4 oz of cream cheese or Neufchatel cheese to the instant pot before cooking. Make sure to stir it in well before serving.
- You can make this recipe with leftover rotisserie chicken or leftover Thanksgiving turkey!
- Make spicy chicken chili instant pot by adding more cayenne pepper or jalapeno peppers.
- Make this recipe dairy free by omitting the mozzarella cheese altogether.
- Top with fresh cilantro, avocado, sour cream, and tortilla chips!
- Serve a bowl of fresh cut limes at the table so your family can add some fresh citrus flavors to their chili.
- Make your instant pot white chicken chili extra creamy! When you take out the chicken, use an immersion blender to cream some of the beans before adding the chicken back in.

Ingredients
- 3 large chicken breasts
- 3 cups chicken broth, gluten free
- 3 15 oz cans cannellini beans, drained
- 1 15 oz can corn kernels, drained
- 1 7 oz can fire roasted diced green chiles, drained
- 1 large onion, chopped
- 1 tbsp cumin
- 1 tbsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp ground cinnamon
- ยฝ tsp ground white pepper
- ยผ tsp ground cayenne pepper
- 2 cups mozzarella cheese, shredded

Instructions
- Add chicken to the instant pot. Add all other ingredients, except for mozzarella cheese. Stir, then lock the lid and seal the pressure valve.
- Set on high for 20 minutes, then allow to naturally release. Once the pot is done, remove chicken from the pot and shred with two forks. Add chicken back to the instant pot, stir in shredded cheese and serve.

This recipe called for ground cinnamon, odd. I did it anyways. And also didnt require any salt, also found that weird. In the end I wish I just would’ve replaced the cinnamon with salt. Other than that the cooking of the soup was great. Super soupy like. Think I would’ve done half a cup of the broth less.ย
