These buttery steak bites are always a hit at my house, and the perfect busy weeknight dinner recipe because they’re ready in less than 30 minutes! You can use strip steak or sirloin steak, or try top round for a more budget-friendly option.

If you’re looking for something even more cost effective, you can make this with stew meat. No matter which cut you use, it will taste amazing when tossed in the buttery garlic sauce!

Ingredients You’ll Need

Steak. I like to use “top round” steak, which is a leaner cut and also more budget-friendly. For the most tender steak, use sirloin steak, strip steak, or a classic ribeye steak.

The most tender cut you can buy is beef tenderloin, which is where filet mignon comes from. It’s also the most expensive.

For a more budget friendly option, you can use flat iron steak, flank steak, or even a pot roast. We’re cutting the raw steak meat into bite-sized pieces for this recipe.

Shallot. I’m using a shallot instead of an onion because they’re sweeter and more mild, which goes well with the garlic butter sauce.

If you don’t have shallots, you can use 1/2 of a small Vidalia onion.

Extra Virgin Olive Oil. Butter will burn at higher temperatures, so we’re using some extra virgin olive oil to sear the steak. You can also use avocado oil or vegetable oil.

Fresh Parsley. This adds a really nice freshness at the end of the dish, and gives some contrasting color which adds to the presentation if you’re making this for guests.

Butter. I always use unsalted butter, because I want to control the salt level. Tossing everything in the melted butter is key to the flavor profile of this dish.

Garlic. You really should use fresh garlic for this recipe, because it will give you the best flavor to compliment the butter sauce.

Spices. These steak bites only need some kosher salt and black pepper. I also added some onion powder and garlic powder for extra flavor.

For these juicy steak bites, you’ll need a medium sized skillet, and a plate.

How to Make Garlic Butter Steak Bites

Time needed: 20 minutes

  1. Sear the steak on both sides.

    Using a paper towel, pat the steak pieces dry. Season the steak with the garlic powder, onion powder, salt and pepper. Heat the skillet over medium-high heat.

    Add the olive oil first, then add the steak pieces in a single layer, leaving some room between each piece. Sear for 2-3 minutes or until a crust forms, then turn over and sear the other side for an additional 2-3 minutes. Remove the steak bites to a separate plate.   2. Cook the shallots.

    Reduce the heat to medium, and melt two tablespoons of butter in the hot skillet. Add the shallots and cook for 2-3 minutes, stirring frequently. Stir in the garlic and cook an additional 1 minute or less. A nonstick skillet with browned shallots in melted butter.

  3. Finish cooking the steak in the garlic butter sauce.

    Add the steak bites back into the pan with the remaining butter. Toss the steak in the garlic butter sauce for 3-4 minutes over medium heat, or until the steak is fully cooked. Recipe Variations

  • Add some crushed red pepper flakes, hot sauce, or cayenne pepper for a spicy kick.
  • Try adding some other fresh herbs to the butter sauce while you’re basting the steak bites, like rosemary, thyme, oregano, or sage.
  • After the steak bites finish cooking, add a small amount of olive oil to the pan and add some veggies like mushrooms, zucchini, asparagus, onions, or bell peppers.
  • Make the sauce creamy by adding a splash of heavy cream and let it simmer for a minute before tossing everything together. Add more flavor with a dash of gluten free Worcestershire sauce.
  • Try adding grated parmesan to the steak just before serving.
  • Cut the steak into bite size pieces and put onto skewers and grill them. Then add the garlic butter sauce over top once the skewers are on a plate.

Recipe Tip! Don’t overcrowd the pan when you’re searing the steak. If the pieces are close together, they will start to steam instead of searing. Work in batches if you have to.

How do you serve buttery garlic steak bites?

These steak bites are best when served over mashed potatoes. They also go really well with gluten free pasta topped with parmesan, rice, or roasted vegetables, like roasted asparagus, cherry tomatoes, or carrots. I would also serve this with my Creamy Mushroom Risotto (just leave out the chicken).

Recipe Tip! While we’re cooking the shallots, the steak will be resting on the plate. This helps it redistribute the juices and stay really tender!
