These marshmallows are a sweet treat and a fun activity for the holidays! The combination of chocolate and marshmallow is a favorite in this house, and something we look forward to on the holidays. Plus you can find all of the ingredients right in the baking aisle, and they make great holiday gifts. They’re the perfect no-bake holiday recipe!ย
I made these marshmallow pops for Valentine’s Day this week, but you can also make these for the holiday season or birthday parties. They’re the perfect treat and make great party favors. You can also make these during the winter, to dip into hot chocolate!
Ingredients Youโll Need
Chocolate Chips.ย Regular semi-sweet chocolate chips work perfectly for this recipe. You can use regular chocolate, dark chocolate, or white chocolate.
If you are dairy free, use vegan chocolate chips. Marshmallows themselves are not vegan, so this would just be to avoid dairy.
Shortening. This keeps the chocolate smooth and helps it melt easily. You can also use a spoonful of coconut oil instead to get a creamy chocolate.
Marshmallows.ย I use regular sized marshmallows, but you can also find jumbo marshmallows at the store. Occasionally, you can find strawberry or chocolate marshmallows, too.ย
Sprinkles. Use whatever assorted sprinkles you’d like to decorate with! I’m using some red and pink sprinkles for the holiday. But you can also make these for Christmas, birthdays, or any reason to celebrate!
Just make sure the brand you choose is gluten free, because sprinkles (especially themed sprinkles) can vary by brand. You can also use different colored sugars.
Lollipop Sticks.ย Regular lollipop or cake pop sticks work for this recipe. You can also use gluten free pretzels for an edible stick.ย
How to Make Chocolate Dipped Marshmallows
- Line a baking sheet with parchment paper. Place each marshmallow on a lollipop stick and stand up on the sheet pan. Set your sprinkles out in separate bowls to make it easier to dip after the chocolate.ย
- In a medium glass microwave safe bowl, add chocolate chips and shortening. Microwave in 30 second intervals, stirring each time, until chocolate is melted and smooth.
- Take a marshmallow and dip into the melted chocolate, coating completely. Hold the marshmallow and gently shake off the excess chocolate. You can also scrape the bottom of the marshmallow on the side of the bowl very lightly, to remove excess but not all of the chocolate. ย
- Dip marshmallow into the sprinkles, then set back onto the prepared baking sheet standing up. Repeat with the rest of the marshmallows. Place in the refrigerator for 20 minutes while the chocolate sets.
Frequently Asked Questions
Chocolate can be temperamental when melting, and can very easily seize up. Make sure the bowl you use is clean and completely dry before adding the ingredients. Also, don’t forget to stir every 30 seconds to help prevent the chocolate chips from burning.ย
Shortening helps keep the chocolate smooth and creamy, while also hardening when at room temperature or colder. This helps when you’re dipping things in chocolate, without adding any off flavors!

Refrigerate for up to a week in an airtight container.ย
Freeze chocolate covered marshmallows for 1-2 months in an airtight container.
Recipe Variations
- You can use regular semi-sweet chocolate chips or white chocolate chips. Or try dark chocolate for a more intense chocolate experience.
- Try some other favorite toppings like chopped peanuts, mini chocolate chips, or coconut flakes. Or add flakey sea salt on top. Get creative with additional toppings! Or just leave the chocolate marshmallows plain (they’ll still taste good).
- Dip these in crushed gluten free graham crackers for a s’mores version! Or drizzle with a layer of caramel.
- Dip marshmallows in chocolate, then decorate with crushed candy canes for Christmas!
- Add a dash of cinnamon to the melted chocolate for a different flavor.
- After the regular chocolate dipped marshmallows set, add a white chocolate drizzle for decoration. This is also a good way to use up extra chocolate.
- Dip the marshmallows in milk chocolate, let it set, then dip it into white chocolate for another layer of chocolate!
- You can decide if you’d like to dip the marshmallows halfway, or all the way for a full coating of chocolate. Both ways can look very decorative.
- Melt white chocolate, then add a few drops of food coloring for Halloween! You can make green chocolate with purple sprinkles, orange chocolate with green sprinkles, purple chocolate, and more! These are always a big hit at Halloween parties.
Cooking Tips
- Melting the chocolate should take about 2 minutes in the microwave. You can also use a double-boiler, but it will take a lot longer.
- If you store these in a container, place a piece of parchment paper between each layer to prevent them from sticking.
- You don’t need to use the lollipop sticks, you can just use a fork and place the marshmallow on the parchment-lined baking sheet to set before eating.
- If you don’t let the excess chocolate drip off first, it will pool at the bottom while the marshmallows set.
- Use parchment paper to line the baking sheet, not oil. Using oil or cooking spray will make the bottom of the marshmallows oily.
- You can use this recipe any time you need to make a dipping chocolate. Make sure you use a microwaveable bowl.

- 2 tablespoons shortening

- 1 microwave safe bowl medium
- lollipop sticks

- In a medium microwave-safe bowl, add half of the chocolate chips and 1 tablespoon of shortening. Microwave in 30 second intervals, stirring each time, until chocolate is melted and smooth.
- Take a marshmallow and dip into the melted chocolate, coating completely. Gently shake the marshmallow to remove excess chocolate. Dip marshmallow into the sprinkles, then set back onto the prepared baking sheet standing up.
- Repeat with the rest of the marshmallows. If you run out of chocolate, melt the next bag of chocolate chips with the remaining shortening using the same method.
- Place marshmallows in the refrigerator for 20 minutes while the chocolate sets.
