Avocado Brownies – Gluten Free!
Avocado Brownies are soft and chewy, and made from scratch in your own kitchen. You won’t even be able to tell they’re made with avocados. And best of all, they’re gluten free!
Remember when I told you that it was my mission in life to hide as many vegetables into my food as humanly possible? Well, I’ve really done it now. Get ready for some veggies in unexpected places!
Avocado Brownies taste just like your favorite rich, chocolatey brownie. That’s right, you can’t even tell that we’ve swapped out the butter for some healthier fats here. The avocado does the job just as well, and you get some nutrition out of it, too. It’s a win-win situation!
Let’s take a minute to really focus on this. First of all, did you know that avocado is technically a fruit? I actually just learned this. Interesting!
If you can just put the fact that avocado is… um, green… aside for just a moment. Let’s just think about how creamy they are. Seriously, the creamiest of the fruit-vegetables. And that’s because they’re full of healthy fats. So, it really does make sense that they bring up the delicious softness of these brownies now, doesn’t it?
And as you know, I’m also collecting recipes like this for my personal fitness journey. I’m down 15 pounds so far, and going strong! It’s my personal philosophy that you shouldn’t have to give up your favorite foods to get fit and strong. You can simply edit them slightly, to be a little bit healthier. And enjoy the ones you can’t edit about 20% of the time. So far, it’s working!
Which is why I also took some of the sugar out of this recipe. In fact, I reduced it by about half. I love sweet food as much as the next person, but I don’t need it. I’d rather settle for a bag of chips any day. So it’s really easy for me to get on board with a brownie that has a little bit less sweetness. But, if you absolutely cannot get on board with this plan, then you can add it back in. Just add another ½ cup of sugar, and use 2 full eggs instead of the half. There you go.
Avocado Brownies - Gluten Free!
Ingredients
- 1 medium avocado, pit and skin removed
- 1/2 cup gluten free all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla extract
- 1/4 cup milk
- 1 tbsp powdered sugar, (for topping)
Equipment
- 9x9" baking dish
Instructions
- Preheat oven to 350°F. Grease a 9x9-inch baking dish.
- Puree avocado in food processor.
- In a medium bowl, whisk together dry ingredients (except powdered sugar). Add all other ingredients and stir together until well combined.
- Pour batter into baking dish and bake for 25-30 minutes, or until a toothpick comes out clean.
- Top with powdered sugar once cooled.

Can I use flaxseed instead of eggs in the lemon brownies
Yes you definitely can. Use 1 tbsp ground flax and 3 tbsp water per egg.
