Air Fryer Baked Potatoes
Air Fryer Baked Potatoes are crispy on the outside and soft and fluffy on the inside, made with russet potatoes coated in olive oil and seasoning then air fried until tender, ready in 50 minutes!

These potatoes are really easy to make, and the air fryer can free up valuable oven or grill space when you’re making a family dinner. You may have to work in batches, depending on the size of your air fryer.Â

Ingredients You’ll Need
Potatoes. You can make this recipe with any type of potato (like red or gold potatoes), but traditionally you would use medium sized russet potatoes for baked potatoes. The size of the potatoes can change the cook time, so adjust accordingly if your potato is smaller or larger.
Scrub potatoes before air frying, to get all of the dirt off. Especially if you’re going to eat the crispy skin.Â
Olive Oil. Coating the potatoes in some extra virgin olive oil right at the end of air frying helps the seasoning coat the potato evenly, and adds some flavor to the potato skin.
You can also use avocado oil or vegetable oil. Leave this step until the very end. The oil will prevent the steam from escaping the potato, so adding it too early will stop the potato skin from getting crispy.
Seasoning. All you need is kosher salt and black pepper for the perfect baked potato. For more flavor, you can also add some garlic powder and onion powder.
If you don’t like the peppery salty skin on a baked potato, you can leave the seasonings out entirely, or just add it as part of the toppings.Â
How to Make Air Fryer Baked Potatoes
- Preheat the air fryer for a few minutes at 400°F. While that’s heating, use a fork to poke a few holes in each potato.
- Add the potatoes to the preheated air fryer in a single layer with some room between each one, and cook for 40 minutes, turning over half way through.
- Remove the potatoes from the air fryer and brush with olive oil. Sprinkle seasoning on both sides, return to the air fryer and cook potatoes for 10 more minutes. Be careful not to use your hands, the potatoes will be very hot!
- The potatoes are done when a fork can go through the middle easily. Cut the potato in half lengthwise, add your favorite toppings and serve.

Baked potatoes are not typically fried, so it doesn’t really change much from the oven to the air fryer when it comes to healthy cooking.
In general, russet potatoes are considered a good source of fiber, vitamins, and minerals, just mind what toppings are added!
I don’t like wrapping potatoes in foil, because this cooking method traps in moisture and will steam the potato. This can result in a soggy baked potato instead of crisp skins.Â
If you want a crispy skin and a fluffy texture on the inside, avoid the aluminum foil altogether. The only time I like to use this method is when grilling, because wrapping the potato in foil prevents the skin from burning before it is done.Â

Storage
Refrigerate in an airtight container for 3-4 days.
Reheat leftover potatoes in the air fryer to bring back the crispy potato skins.
Freeze leftover baked potatoes in an airtight container for 2-3 months. This is a great way to batch cook and have lunches ready to go!
Recipe Variations
- You can use whatever seasoning you’d like for baked potatoes! Try this Homemade Taco Seasoning, or Ranch Seasoning.
- Try topping your potato with sour cream, shredded cheddar cheese, broccoli, butter, bacon, and chives for a loaded potato! For a lighter option, try using greek yogurt instead of sour cream.

- The way to make a really crispy baked potato is to leave the oil off entirely, so it doesn’t trap the moisture in. I like to add seasoning to the outside of my potato, which is why we’re adding the oil and seasoning at the very end. Best of both worlds!
- The cooking time can vary depending on the potato size. This recipe uses medium potatoes. If you have larger or smaller sized potatoes, adjust the cooking time accordingly.
- Poking holes in the potatoes helps the potato release steam, so it won’t split open while it’s cooking.
- Use a pastry brush or a bbq brush to spread the olive oil and seasoning on the potatoes while they’re still hot.
