Air Fryer Red Potatoes
Air Fryer Red Potatoes are the perfect savory side dish, made with red potato wedges, olive oil, and spices like paprika and garlic, topped with fresh parsley and ready in under 45 minutes!

This is a quick and easy version of traditional oven roasted potatoes, great for when you want to free up oven space (or avoid using a sheet pan). This air fryer potato recipe will easily become one of your new favorite recipes!
Ingredients You’ll Need
Baby Red Potatoes. This recipe works great with red baby potatoes, but you can also do this with larger potatoes like gold potatoes, yellow potatoes, or russet potatoes. The baby red potatoes have a great flavor, and the prep time is faster because they’re already small.
Whatever type of potato you choose, if it’s a medium potato just cut them to about 1-inch pieces, and try to be consistent with the size so they cook at the same time.
Olive Oil. Use extra virgin olive oil here. You can also use avocado oil or canola oil, or cooking spray. You need to have a small amount of oil for air fryer recipes, or it will turn out dry.
Spices. I like to keep it simple for potatoes but you can get creative at this part. I use garlic powder, onion powder, paprika, salt, and black pepper.
For variation, try adding curry powder, ranch seasoning, taco seasoning, Italian seasoning, or whatever your favorite flavor combination is.
Parsley. Fresh herbs are the perfect finish to any air fryer or roasted potato dish. Plus it looks great as a garnish.
How to Make Air Fryer Red Potatoes
- Wash and cut the red potatoes into quarters, trying to cut them all to about the same size. Add the potato quarters to a bowl of warm water and let soak for 15 minutes.ย
- When the potatoes are done soaking, drain the water and pour the potatoes onto paper towels. Dry them completely before adding any oil (or it won’t stick).ย
- Toss the potatoes with olive oil and spices, then add to the air fryer basket.ย
- Set the air fryer at 400ยฐF for 20 minutes. Every 5 minutes, carefully take the basket out and shake the potatoes, then place it back in the air fryer to continue cooking. For extra crispy potatoes, add an additional 5-10 minutes to the cooking time. Transfer potatoes to a bowl, top with parsley, and serve.ย
Frequently Asked Questions
How long you need to cook potatoes in an air fryer depends on how big your potatoes are, and how crispy you like them. For these small red potato wedges, you can expect to cook them for about 20 minutes, or 25-30 minutes if you like them more crispy.
You don’t technically have to soak the potatoes before air frying, but I definitely recommend soaking them for a better texture in the end. Soaking the potatoes helps eliminate some of the starch, and results in a more crispy outside, similar to an oven roasted potato.ย
Storage
Store cooked potatoes in an airtight container in the refrigerator for 2-3 days.ย
Freeze air fryer potatoes in an airtight container for 2-3 months. Reheat them in the air fryer.

Ingredients
- 2 lbs baby red potatoes , washed and quartered
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 2 tablespoons fresh parsley , chopped
Equipment
- 1 Air Fryer
- 1 medium bowl
Instructions
- Cut potatoes into quarters and place into a medium bowl. Cover potatoes with warm water and soak for 15 minutes. Once done, drain the water and dry potatoes completely with paper towels.
- Dry the bowl completely, then add potatoes back into the bowl and toss with olive oil and spices. Add potatoes to the air fryer.
- Set the air fryer at 400ยฐF for 20 minutes. Every 5 minutes, carefully remove the air fryer basket and shake the potatoes, then put them back to cook. If you want crispy potatoes, add an additional 5-10 minutes of cook time.
