Air Fryer Sweet Potato Wedges are really easy to make and one of my favorite air fryer recipes, as well as a healthy side dish on a weeknight!  You can make these in batches in the air fryer, or if you’re in a time crunch place them all on a lined baking sheet and bake them. 

Ingredients You’ll Need

Sweet Potatoes – Choose a medium sized potato, it’ll be easier to get reasonably sized wedges. And wash really well before cooking if you plan to leave the skins on. 

Extra Virgin Olive Oil – I always have olive oil in my kitchen, but you can also use vegetable oil, avocado oil, or whatever you have. This isn’t the classic deep frying process, so you have some options. The oil is the key to crispy skins!

Spices – You can use any of your favorite spices for this recipe. Try classic salt and pepper only, or add some garlic and red pepper flakes. Get creative here.

How to Make Air Fryer Sweet Potato Wedges

  1. Cut sweet potatoes into wedges. Place the wedges in a mixing bowl of cold water, making sure they’re completely submerged. Let them sit for 20-25 minutes, then drain the water. Spread the wedges out on a baking sheet lined with paper towels, and pat dry with a paper towel.ย 
  2. Add the potatoes to a dry bowl and drizzle with olive oil. Add spices and toss until completely coated.ย 
  3. Place wedges in the air fryer basket and set the air fryer for 390ยฐF for 20-25 minutes.
  4. Every 5 minutes, take the basket out and shake the wedges, then place them back in to continue cooking.ย 

How to Cut The Potatoes Into Wedges

  • Wash the potatoes thoroughly. Cut the potatoes in half from end to end.

  • Place the flat side down in the cutting board, then cut in half again.ย

  • Cut those two new pieces in half. Repeat for both sides of the potato.ย

  • If your potatoes are big enough, cut the long wedges in half in the middle.ย

Jacqui’s Tip! This part is a little tricky, so I put together some photos showing how to cut the potato wedges. If you make a mistake, just throw them into the air fryer anyway. They don’t have to be perfect, they just have to be delicious!

Frequently Asked Questions

Why won’t my sweet potato wedges go crispy?

Your wedges may not get crispy for a few reasons.ย 
Oil.ย The air fryer still requires a small amount of oil to work. If you didn’t completely coat the wedges, they may not get crispy.ย 
Time.ย Your wedges may still need more time to cook. Make sure your temperature is 390ยฐF.ย 
Shake the basket.ย If the potato wedges are sitting on top of each other in the basket, the air may not be circulating well enough. Try shaking the basket every 5 minutes to make sure every potato surface has a chance to cook.ย 
Size.ย Make sure your wedges are all around the same size, so they cook at the same time.ย 

If you’re still having issues making your potato wedges crispy, try adding a dusting of corn starch before cooking. It’ll help absorb any additional moisture on the fries.

Should sweet potatoes be soaked in water before air frying?

Yes, you want to submerge the potatoes in water to remove some of the excess starch from the potato. This is the key for the perfect fries! Soak them for at least 20-30 minutes, and dry completely before adding the oil.ย 

Can you leave the skin on sweet potatoes?

Yes you can leave the skin on the sweet potatoes, but that’s entirely option and a personal preference for most recipes. Sweet potato skins are actually a good source of fiber and vitamins!

Refrigerate in an airtight container for 2-3 days. Reheat them in the air fryer for the best result.

Freeze after cooking by placing the fries on a baking sheet in the freezer. Once they’re frozen, move them to an airtight container in the freezer for 2-3 months. Reheat on a baking sheet or in the air fryer.

Tips an Tricks

  • The cooking time can vary depending on how big you slice the wedges. You may need to add more or less to the cook time.
  • Sprinkle with a small amount of brown sugar for sweeter wedges.
  • This recipe also works with russet potatoes.ย 
  • Use frozen wedges or fries. Just spray lightly with cooking oil and air fry until they’re warmed through, shaking the basked every 5 minutes.ย 
  • Try using garlic powder, onion powder, salt, and black pepper. After they’re done, sprinkle with parmesan cheese while they’re still warm. I would use a teaspoon garlic powder, but you can add more or less depending on your preference.ย 
  • There are a lot of different ways to make these! Try chili powder or chipotle powder, then top the finished wedges with black beans and jalapeรฑos and serve with sour cream.ย
