Crispy Air Fryer Potato Wedges

Crispy Air Fryer Potato Wedges
Crispy Air Fryer Potato Wedges are incredibly easy to make, and perfect for a weeknight dinner. I like to make a batch of these on burger night, but they also pair really well with my Air Fryer Steak, or even grilled chicken. You can also get really creative with the seasoning here. I went for a more traditional garlic parmesan approach, but you can try other combos of spices and herbs like cilantro lime, curry powder, rosemary and thyme, or just plain salt and pepper.
Why do you soak potatoes in cold water before air frying?
Soaking the raw potatoes in cold water before air fryer helps to get rid of some of the natural starches that prevent them from getting crispy. Try to soak them for at least 20-30 minutes. I also try to dry them as much as possible before cooking with them.
Why is my food not crispy in the air fryer?
If you’re food isn’t getting crispy in the air fryer, it’s most likely because the air isn’t circulating around the items enough. The key for when you have a full air fryer basket like with this potato wedges recipe is to take the air fryer basket out and shake it every 5 minutes or so.
It’s also important to add a small amount of oil to whatever you’re putting in the air fryer. It’s still way less than if you’re deep frying. Think of it as just a few sprays of cooking oil spray. This entire recipe is made with only two tablespoons olive oil. It really makes a difference if you’re trying to achieve crispy potato wedges.
Can you make air fryer potato wedges ahead of time?
I don’t recommend making these potato wedges ahead of time. Just like regular French fries, once they get cold, they’re never quite the same. I mean, I’ll eat them anyway. But they’re not as good as just out of the fryer.
What types of potatoes should you use?
I recommend using russet potatoes because they will hold up better. Other potato varieties like Yukon golds or white potatoes might get too soft and won’t hold their shape well. In the end, experiment and use your favorite type of potato. This also works great for sweet potato wedges.
Make sure you use small to medium russet potatoes. Or your wedges will be really big and won’t crisp up properly. Usually baking potatoes are on the larger size if you see them at the store.

Tips for Making Air Fryer Potato Wedges
- You can make this spicy by adding a dash of cayenne pepper. You can also add a really nice color with more or less paprika.
- Make your wedges by cutting your potato longways, then putting the flat side down on the cutting board. Then, depending on the size of your potato, you can cut them in half, then each side in half again. You should get 8-10 wedges per potato. If you’re using larger potatoes, you can cut those in half.
- I wash the potato skin really well and leave it on for my fries. The skin has a lot of good nutrition. If you don’t like to eat the potato skin, you can peel the potatoes before starting.
- You can make this recipe with frozen potato wedges instead of fresh potatoes. I would add the oil and cook them, shaking ever 5 minutes, then add the seasoning last. The cooking time may change with frozen potatoes.
- Pair these with the garlic aioli sauce from my sweet potato fries recipe! You can also top with fresh herbs like parsley or rosemary, or a teaspoon sea salt or seasoning salt.
Crispy Air Fryer Potato Wedges
Ingredients
- 3 medium russet potatoes, cut into wedges
- 2 tbsp extra virgin olive oil
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup parmesan cheese

- Air Fryer
- Bowl
Instructions
- Place potato wedges in a large bowl and cover with cold water. Soak for 20-30 minutes. Drain water and place wedges on paper towels and pat dry. When dry, transfer back into bowl. Toss wedges with olive oil and seasoning until evenly coated.
- Preheat air fryer for 2-3 minutes at 390ยฐF. Add potato wedges to air fryer basket and set timer for 20 minutes. Every 5 minutes, take the basket from the air fryer and shake fries. Then place back in air fryer.
- Once time is up, remove fries from air fryer and add more salt and pepper to taste. Top with parmesan cheese and serve.
